Homemade Molten-centred Fairycakes for Mother's Day!

Yes unfortunately, this is a late post. Moving on, fairycakes are so so easy to make! These bite-sized beauties are perfect for tea parties but are definitely better given as gifts and that's exactly what I baked them for today! Since it was Mother's Day 2 weeks ago, I made these for my mum and my boyfriend's mum too. A few of these fairy cakes were for my mum but the vast majority were for my boyfriend's mum. She's been so nice to me and since I've been accepted into the family; it was only right that I make her a few goodies just to show my appreciation. Here's a quick recipe on how to make these cute little treats.


What you need:
  • 115g unsalted butter
  • 115g self raising flour
  • 2 beaten eggs
  • Sugar flowers, strawberries (decorating)
Buttercream Icing: 
  • 125g softened butter
  • 300g Icing sugar
  • 1 tablespoon milk
  1.  In a large bowl, cream together the butter sugar. Use electric hand mixer here then beat in milk, and continue mixing until light and fluffy. Cover icing until you're ready to decorate.

Method:
  1. Preheat oven to 180C. Place 12 paper cases onto baking tray.
  2. Cream together sugar and butter in a large bowl until fluffy and pale. Add eggs and beat well after each addition.
  3. Fold in flour with wooden spoon, mix well.
  4. Spoon half the mixture into paper cases. Using a teaspoon, make an indentation in the centre of each then break chocolate into squares.
  5. Place each piece in indentation then spoon remaining mixture on top.
  6. Bake for 15-20 minutes until well risen
  7. Remove from oven and leave to cool. 
  8. Decorate!


I packaged them up in pretty mini boxes so as to transport safely! I really enjoyed making these and I hope you do too!
