Prep time: 10 mins Cooking time: 45 mins
What you need:
- 2 carrots, sliced
- 1 pack of baby potatoes
- 1 pack of chicken wings, marinated 2 hours before
- Yellow, green and red pepper, chopped
- Handful of Beansprouts
- 1 tin of chopped tomatoes
- Fresh bunch of spring onions, chopped
- 1 garlic clove, crushed
- 2 tbsps olive oil
- Ground pepper
- A sprinkle of salt to taste
Method:
- Preheat oven to 180C.
- Place chopped vegetables and baby potatoes into baking dish. Pour oil over the vegetables and squeeze lemon juice then sprinkle black pepper and salt.
- Lay chicken wings on top of vegetables then sprinkle spring onions on top.
- Bake for 45 mins or until chicken has no pink left.
- Serve.
