Slow Roast Pork Belly


Slow roast pork belly is definitely one of the most popular, simple yet mouth-watering dishes out there. Apart from chicken, pork is one meat I'm very fond of which is why I tend to prepare meals based around it quite often. In order to achieve that beautiful burst of flavours, your pork belly has to be marinated for at least three hours. I'd say that is pretty much the lenghthy part; it's smooth sailing from here.
Preparation time: 10 minutes       Cooking time: 2 hours
What you need: 

  • 600g Pork Belly Joint
  • 1 tbsp cooking oil
Marinade:
  • Quarter cup lime juice
  • 2 tbsp hot madras powder
  • Quarter cup Nandos medium peri peri marinade
  • 4 garlic cloves, crushed
  • Half teaspoon ground black pepper
  • 1 teaspoon salt
Method:
  1. Cut your pork belly joint into strips.
  2. In a large bowl; combine marinade ingredients then marinate pork belly for 3 hours or overnight in a fridge. 
  3. Preheat oven to 200C/gas mark 7.
  4. Remove pork belly and reserve the marinade. It makes a great tasting sauce.
  5. Transfer to roasting tray then roast for 25 minutes. Now lower heat to 150C and roast for a further one hour 35 minutes. 
  6. Leave to cool then serve with steamed rice and chilli sauce.
