
Preparation time: 10 minutes Cooking time: 2 hours
What you need:
- 600g Pork Belly Joint
- 1 tbsp cooking oil
Marinade:
- Quarter cup lime juice
- 2 tbsp hot madras powder
- Quarter cup Nandos medium peri peri marinade
- 4 garlic cloves, crushed
- Half teaspoon ground black pepper
- 1 teaspoon salt
- Cut your pork belly joint into strips.
- In a large bowl; combine marinade ingredients then marinate pork belly for 3 hours or overnight in a fridge.
- Preheat oven to 200C/gas mark 7.
- Remove pork belly and reserve the marinade. It makes a great tasting sauce.
- Transfer to roasting tray then roast for 25 minutes. Now lower heat to 150C and roast for a further one hour 35 minutes.
- Leave to cool then serve with steamed rice and chilli sauce.
