Curried Potatoes

As we all know, potatoes are a very versatile food that can be prepared in a number of different ways and are of great nutritional value. Their flesh and skin contains different kinds of vitamins and phytochemicals that are essential for the body, another one you can add to your list of reasons why all kinds of potatoes should be loved. What you need: 
  • 4 large potatoes, diced
  • 1 tomato tin, chopped
  • 1 large red pepper, sliced
  • 1 tablespoon ground turmeric
  • 1 tablespoon paprika
  • 1 fresh chilli or to taste
  • half clove of garlic, finely chopped
  • 100ml water
  • 1 onion, sliced
  • 1 bunch fresh coriander, chopped
  • 1 tablespoon garam marsala
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin


Method:
  1. Add the potatoes to salted boiling water and cook until nearly cooked. Drain potatoes and set aside.
  2. Saute garlic, bells peppers and onion until soft then set aside.
  3. Stir-fry the garam masala, ground coriander, cumin, turmeric, paprika and fresh chilli for 2 minutes. Add 4 tablespoons water to make a paste.
  4. Add chopped tomatoes to the spice paste and cook for 3 minutes, add salt and pepper to taste. Add potatoes, onions and pepper. Mix well.
  5. Add 125ml water and let cook for 10-15 minutes. Stir well and add more water as necessary. 
  6. Top with chicken breast and serve with rice or whatever you prefer.
