What you need:
- 4 large potatoes, diced
- 1 tomato tin, chopped
- 1 large red pepper, sliced
- 1 tablespoon ground turmeric
- 1 tablespoon paprika
- 1 fresh chilli or to taste
- half clove of garlic, finely chopped
- 100ml water
- 1 onion, sliced
- 1 bunch fresh coriander, chopped
- 1 tablespoon garam marsala
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
Method:
- Add the potatoes to salted boiling water and cook until nearly cooked. Drain potatoes and set aside.
- Saute garlic, bells peppers and onion until soft then set aside.
- Stir-fry the garam masala, ground coriander, cumin, turmeric, paprika and fresh chilli for 2 minutes. Add 4 tablespoons water to make a paste.
- Add chopped tomatoes to the spice paste and cook for 3 minutes, add salt and pepper to taste. Add potatoes, onions and pepper. Mix well.
- Add 125ml water and let cook for 10-15 minutes. Stir well and add more water as necessary.
- Top with chicken breast and serve with rice or whatever you prefer.
