Serves 4
What you need:
- 500g beef mince
- Cooked quinoa
- 1/2 chopped finely onion
- 1/4 cup honey
- 1/4 cup fresh lime juice
- 1/2 teaspoon red pepper flakes
- 2 handfuls Spinach
- 1 tin of red kidney beans, drained
- 2 handful beansprouts
- 1/2 cup sweetcorn
- 1 tin of Chickpeas, drained
- 1/4 teaspoon turmeric
- 1/2 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
Method:
- Over medium heat, cook beef in a large skillet. Cook until no pink colour remains, the mince will be a brown colour (about 8 minutes to it through).
- Drain grease from pan and add a tbspn of olive oil. Add in onions, red pepper flakes, beansprouts, spinach, chickpeas, red kidney beans, sweetcorn and stir fry for about 2-3 minutes. Add 4 tablespoons of water, lime juice and lower the heat.
- Add in honey, turmeric, cayenne pepper and season. Gently stir in quinoa , mix well for a further 2 minutes.
- Serve immediately.
