What you need:
1 cup quinoa
2 cups almond or Soya milk
1/2 cup water
2 tsp vanilla extract
1/2 tsp cinnamon
2 tbsp brown sugar
2 tbsp honey
Toppings:
1 small banana
2 large strawberries
Blueberries
Small kiwi
Mixed seeds
Method:
- Rinse quinoa and set aside.
- Heat up milk and water in a saucepan on medium heat until hot and then add in quinoa.
- Raise the heat slightly to bring to a gentle boil then lower the heat again (low heat) and cover for 15 mins. Simmer.
- Remove lid and stir in honey, sugar, vanilla extract and cinnamon.
- Cover with lid again and simmer for a further 10 mins.
- If the porridge dries up before its completely tender, pour in additional milk or water then cover. Stir occasionally.
- When ready, the consistency is like that of oatmeal. Remove from heat, stir in vanilla extract and dish out into bowls.
- Add fruit toppings and seeds.
- Serve.
