Sweet Potato Muffins

No mess and quick to make, these Sweet Potato and Banana Muffins are quite the combination. They are slightly fluffy and moist with no added sugar, their sweetness is from bananas and of course sweet potatoes. Probably one of the easiest recipes to follow, no oil or butter required. Just thought I'd let the natural ingredients do the talking for a change. I'm not quite sure what it is about Spring and summer that makes me want to eat a lot of mashed starches. I'm talking butternut squash, pumpkins and of course sweet potato. Now, why don't you give this one a try.
Prep: 5 minutes                                                                                    Cooking: 25 minutes
Makes: 8-10

What you need:

1 1/2 cups mashed sweet potatoes
3 eggs
1/2 cup coconut flour
1 tsp baking powder
1/2 tsp bicarb of soda
1 cup blended bananas
1/4 cup water (add more if required)
1 tsp vanilla extract

Method: 

  1. Preheat oven to 180 degrees C.
  2. Combine all ingredients in a blender and blend until mixture is a fine batter.
  3. Divide butter into prepared muffin tin.
  4. Bake for 20 to 25 minutes. Use toothpick to check their progress, will come out clean when muffins are ready.
  5. Remove from oven and allow to cool.
  6. Enjoy.




Baking shouldn't be hard which is why my recipes are always so simple.
