Serves 5
Ingredients:
Amoy straight to wok Udon noodles
3 chicken breast fillets, chopped
3 spring onions, chopped
Red bell peppers, chopped
1 packet baby corn, cut up
1 large courgette, sliced
1 cup beansprouts
1 vegetable stock cube
1/2 tsp turmeric
Chilli powder (optional)
Salt and pepper to taste
1 tbs olive oil
Method:
- In a large wok, heat up oil and fry chicken breast until no pink remains. Now add onions, Bell peppers, baby corn and beansprouts. Mix gently.
- Prepare stock cube according to package instructions and pour in.
- Add Udon noodles and stir until combined.
- Leave to simmer for 5 mins. Serve.
