*Lemon Mackerel with VeeTee Long Grain Rice Pot

University has been keeping me awfully busy lately which means less time for cooking. Welcome to the sweet life of a Dietetics student. As you already know, I’m a huge rice lover but it does take time to make from scratch. With deadlines and assessments coming up, I’ve turned to VeeTee rice pots, one way to make life that little bit easier. VeeTee rice pots are great for those super busy days. However, I had always been sceptical about how microwaveable rice would taste but these rice pots taste a lot better than anticipated.


Wondering what VeeTee is? Well, it’s a company that specializes in rice, one that is praised for increasing access to quality, customised food. As a student myself, these rice pots have been a great time saver. Rice pot in one hand, microwave set to two minutes in another, just whack it in and you're good to eat. Even if you’re not good at cooking, you can still have VeeTee rice. Their rice pots come in individual portions, require no cooking skills and best of all, there are no extra dishes to wash. Here’s to a source of carbohydrates made easy. So, why not give VeeTee a try, starting with this delicious lemon mackerel served with VeeTee long grain rice.


Serves: 5
Ingredients
Veetee Long grain rice pot
1 tbs olive oil
1 tin chopped tomatoes
1 courgette, chopped
Half red onion, chopped
¾ cup frozen green peas
½ green, ½ yellow bell peppers, chopped
1 tin red kidney beans
4 cans tinned mackerel (tinned in brine)
1 tsp turmeric, 1 tsp basil, 1 tsp cumin, black pepper and salt to taste
Juice from half a lemon




Method:
  1. Heat oil in large pan and fry onions, courgette and bell peppers. Add tomatoes and green peas, mix gently.
  2. Pour in red kidney beans and tinned mackerel then squeeze fresh lemon juice. Season and mix.
  3. Simmer for 10-15mins on low heat.
  4. Microwave Veetee rice pots for 2 mins, serve.
