Quorn Spaghetti Bolognese

Who loves a one pot dish? I know I do, they're quick and well, there's fewer dishes to do afterwards. We had this practical in University back in November and this was one of the dishes I made with my group. We had to design a day's meal plan for a Type 2 Diabetic and personally I feel that this is the best way to learn. Putting all that theory into practice, everything starts to make sense then. Anyway, here's to quick, nutritious meals and few dishes. 


Serves: 3-4

INGREDIENTS:

350g Wholewheat spaghetti
300g Quorn mince
1 tbs olive oil
1 crushed garlic clove
1 red bell pepper
1 courgette chopped
1 onion chopped
1 cup spinach
1 vegetable stock cube
1 tsp oregano
1 tsp mixed herbs
Black pepper to taste

METHOD:
Cook spaghetti according to packaging instructions. Drain and set aside.

In a large skillet, heat oil and add onions, garlic and courgette. Fry for 1 min then add in tomatoes and stock. Mix until combined.

Prepare stock cube and pour into mixture then add quorn mince. Mix and lower heat, leave to simmer on low heat for 10-15 mins.

Season then add in spaghetti and spinach, combine. Leave to simmer again for 5 mins. Serve.
