Butternut Squash Chicken Casserole

When it comes to one of the most delightful chicken dishes out there, casseroles definitely take the cake. It's no secret that I cook a lot of casseroles, this is mainly because they are easy to throw together. I cooked up this rather appetising casserole for dinner and thought I'd share the recipe real quick. Who doesn't love a satisfying, flavourful casserole when the family is all together and it's smiles all round.

Prep time: 2 hrs 10 mins (including marinating the chicken)                       Cooking time: 50 mins

What you need:
  • Chicken Wings (marinate 2 hours before)
  • 1 large Sweet potato
  • 2 tablespoons olive oil 
  • Half of a Butternut Squash
  • 3 large Potatoes
  • Red, Yellow and Green peppers, finely chopped
  • Half a lemon (the juice)
  • Black Pepper
  • Salt

Method:
  1. Preheat oven to 200C.
  2. Cut sweet potato, butternut squash and potatoes into pieces then line up in baking dish. 
  3. Add in the finely chopped peppers, oil then squeeze fresh lemon juice into dish.
  4. Sprinkle salt and black pepper for taste.
  5. Place marinated chicken wings on top then its ready to go into the oven.
  6. Bake for an hour or until chicken is cooked through and vegetables have softened.
  7. Serve with brown rice and a nice glass of orange juice. (I'd say wine, but I don't drink).
