What you need:
- 2 tablespoons olive oil
- Fresh peas
- Green, red and yellow peppers
- Half a teaspoon of salt
- Baby carrots
- Black pepper
Method:
- Preheat oven to 180C.
- In a large bowl, prepare the marinade by placing a tablespoon of oil, chilli powder, black pepper, a quarter fresh lemon juice.
- Add chicken into marinade and leave in the fridge for 2 hours.
- Now place vegetables into baking dish then add in chicken along with marinade.
- Bake for 50 minutes until chicken is golden brown and no pink colour remains.
- Serve with rice.
