Pancakes 2 ways. Happy Pancake Day!

Forks at the ready, happy pancake day earthlings! This highly anticipated day filled with lots of fruit, syrups, honey and nutella has come around so quick don't you think? Don't you love the endless choice of fillings available to you when it comes to pancakes? I know I do, sweet or savoury, decorate away. Whatever rocks your boat. I make pancakes at least once a month so Pancake day presents the perfect excuse for me to whip up another batch. Let's get cooking!


Plain vanilla pancakes OR Strawberry and vanilla pancakes; nothing quite like a two for 1.

What you need: 
  • 1 egg
  • 1 cup all purpose flour
  • 1 cup milk 
  • 1 cup fresh chopped strawberries (if you're making strawberry pancakes)
  • 2 teaspoons baking powder
  • 2 tablespoons brown sugar
  • 1 tablespoon olive oil
  • 2 tablespoons vanilla extract 


Method:


  1.  Stir together flour, brown sugar, baking powder and salt then pour in the milk, oil, egg and vanilla, and mix well. 
  2. If you're making the second version, stir in the strawberries at this point.
  3. Heat up a large pan coated with butter then add in a tablespoon of batter or desired size of pancakes.
  4. Flip with a spatula when bubbles appear in the center. Cook until golden brown on the other side.
  5. Serve


Pancakes tend to be quite filling when paired up with the right topping. I tend to go for honey and fruit topped pancakes as they are one way of incorporating fruits into your diet. They are also slightly healthier, not to mention absolutely delightful. These strawberry pancakes are so easy to make, versatile and can make a great breakfast or light brunch option. The first batch is served with blueberries and bananas, syrup and a sprinkle of cocoa powder. The pancakes below are topped with butter and strawberries. So easy yet so delicious.
