Happy 2019!!! I hope you enjoyed the holidays. Now let's talk food. The delicate flavour of mint and lemon goes so well together, something that would be great for a nice, relaxing weekend. I'm giving the soups and casseroles a rest this week to explore other foods & well, chicken is never a bad start. For a no-fuss dinner, these chicken thighs are a perfect choice.
What you need:
- Heat the oven to 200 C. Place the chicken thighs and chopped lemon in a roasting tin.
- Drizzle with oil and season chicken.
- Roast for 25 minutes until cooked through. Mix the mint leaves with the garlic and the lemon juice, and pour over the chicken.
- Roast for a further 10 minutes then serve.
