This is undoubtedly the most comforting meal to sit down and tuck into on a dreary, wet day. Coated in tasty, creamy yogurt sauce, this is one dish that will keep you going back for more. It just goes to show that meat is not what 'makes' a meal, it is the rich flavours and textures. Deliciously simple? It is. Are the noodles versatile? They sure are. There are various ways to enjoy noodles but this one is right at the top of my list. At just 135kcal per serving (please find the full nutritional breakdown below), this is a healthy, cost effective dish that tastes great too.
Serves: 2
What you need:
- 42.5g Noodles (I used Sau Tao Yu Mein Noodles, 42.5g which is enough for 2 servings)
- 1 tbsp olive oil
- 1 cup water
- 10 cherry tomatoes
- 1 minced garlic clove
- 1/2 grated onion
- 1 teaspoon Thyme
- 1/4 teaspoon basil
- 1/4 teaspoon chilli flakes
- 1/4 teaspoon ground ginger
- 3/4 cup low fat plain yogurt
Method:
- Boil some water and cook noodles according to package instructions.
- In a large skillet, heat up oil then saute garlic and onion. Stir in one cup water and add in all spices and herbs.
- Simmer for about 5 minutes. Stir in the yogurt and cook for a further 8 minutes until sauce has reduced. Leave uncovered.
- Drain noodles and toss them in. Add cherry tomatoes as well. Mix well.
- Serve immediately.
