Banana Dark Chocolate Chip Muffins (no added sugar)


Here's to a delicious, guilt free treat. If you're a big muffin lover like me, you'll always find a way to make these delicious balls of goodness just that little bit healthier. Home-baking is a great way to do this, you have control of what goes into your mix and of course total power over the flavour. This morning I baked a lovely batch of healthy Banana chocolate chip muffins for breakfast. They are under 250 calories and have no added sugar which will make your teeth very happy. I can safely say that these are my favourite muffins to date; they are moist and make a delicious breakfast or snack.

INGREDIENTS:

1 1/2 cups wholemeal flour

2 bananas, mashed

1/2 cup honey

1/4 cup dark chocolate chips

1 tsp baking powder

1/2 tsp baking soda

1 tsp vanilla extract

2 eggs

1/2 cup plain greek yoghurt




METHOD:
  1. Preheat oven to 190 degrees and prepare baking tin. 
  2. Combine flour, baking soda & baking powder in a bowl and set aside.
  3. In another bowl, mix mashed bananas, eggs & vanilla extract. Beat with electric mixer until smooth. Add yoghurt then beat again.
  4. Gently fold in the dry ingredients (flour, baking soda, baking powder) until moulded together. Fold in chocolate chips. 
  5. Divide batter into muffin cups and bake for 20 minutes.
  6. Enjoy.
