INGREDIENTS
300g 5% fat beef mince
1 can chickpeas, drained
1 tbs vegetable oil
1 onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 can chopped tomatoes
1 cup mixed frozen vegetables
1 tsp mixed herbs
Half stock cube
1 tbs Encona extra hot pepper sauce
Salt and black pepper to taste
METHOD:
- In a large pan, heat up oil and fry mince until brown. Add in onions, bell peppers and tomatoes, mix until combined.
- Prepared stock according to packet instructions, pour into mince mixture. Add in chickpeas and vegetables, mix.
- Lower heat, season with herbs, salt and encona sauce. Leave to simmer for 10 mins or until vegetables are tender. Serve.
