Butter Bean Steak Sandwich

Have you ever tried Butter Beans? They are creamy-coloured and a lot bigger and smoother than regular beans. Butter beans can be incorporated into a variety of meals including salads, soups, stews, sandwiches and more. That's how this little number came about, it seems that with warm weather comes more colourful, 'dry' meals. British weather has been absolutely glorious the past few days, we did not see this coming. So much so that we are missing the rain a little, the humidity is a tad much. So here's a delicious sandwich that is sure to take your mind off this heat.

Makes: 4 sandwiches.
Cooking time: 10 mins


INGREDIENTS:

2 steaks, chopped into small pieces(I used Rump steak, down to preference)

1 tbs olive oil

1 tin of butter beans

1 cup spinach

Half red Bell pepper

Half yellow Bell pepper

Chopped spring onions

2 tbs water

Black pepper and salt to taste

4 brown seeded buns (This one's from Tesco)


METHOD: 


Heat up oil on medium heat. Fry steak for 3-5mins (dependant on whether you like med rare or well done). I like mine well done.

Add spring onions, peppers, spinach and 2 tbs water. Mix for 2 mins.

Drain out butter beans in the sink then add them to the steak mixture. Season with salt and black pepper. Lower heat and leave to simmer for 2-3 mins.

Slice buns in half and stuff with steak filling. Enjoy!
