Prawn Medley

I'm back with a good recipe, one I think you'll love. Never thought I'd see the day when I would be absolutely loving Seafood. Yes ladies and gentlemen, I have turned a new page, fully indulging in all things Seafood and it all started with one restaurant visit last year. After a long day at university or work, the last thing you want to do is to spend more than hour cooking. Why not go for dishes that are easy and quick to make as well as nutritious like this Prawn Medley. With a variety of flavours and textures, this delicate prawn dish is set to become a firm favourite.
What you need:

150g Cooked and Peeled King Prawns (these are from Sainsburys)
1 tbs rapeseed oil
1 cup Brussel sprouts
3 chopped spring onions
1 cup chopped carrots
1 tsp black pepper
1/2 tsp chilli flakes
1 tsp turmeric powder
3 tbs water
2 tbs Oyster sauce


Method:

  1. Steam brussel sprouts and carrots for about 7-8 minutes or until tender and set aside.
  2. In a large pan, heat up 1 tbs rapeseed oil.
  3. When hot, add in spring onions, black pepper and chilli flakes. Fry on medium heat for 2 mins.
  4. Pour in steamed brussel sprouts, carrots and turmeric. Mix well. 
  5. Now add cooked prawns, 3 tbs water, oyster sauce and any other sauces you like. 
  6. Simmer on low heat for 5-10 mins.
  7. Serve with a side of rice.
