Fruit topped Rye Bread with Almond butter

Apologies for being M.I.A the last few weeks, it seems being a student Dietitian is a full time job. You'll be pleased to know however that though it's a tad difficult, I'm thoroughly enjoying the course. This year consists of Principles of Dietetics, Specialist Dietetics, Life Span Nutrition etc, basically all the good stuff so I'm super excited and focused. I spend most of my days  buried under a pile of books, reading through hundreds of journals and sipping on green tea. Ahh, welcome to the life of a Student Dietitian! That doesn't mean I've stopped cooking up a storm and sharing recipes. There's nothing quite like starting the day with a tasty almond butter open sandwich. Now that I've got your attention, let's get right to it.



I have a 9am start every morning so breakfast has to be a grab and go job. This open sandwich is a great way to get in some fruit early on in the day and is so easy to prepare.

Ingredients:

Slice of Rye bread
Almond butter
Frozen fruits
Small banana
A pinch mixed seeds

Method:


  1. Spread almond butter onto rye bread then top with sliced banana.
  2. Add some frozen fruits, finishing off with a sprinkle of mixed seeds. 

Can it get any easier than this? Enjoying the little things.
