Linguine Vegetable Medley

Yes, little me is still alive and well, just extremely busy which is why I've been slacking a bit on blogging. My course has become quite intense very quickly. I've got a lot of work to do so just trying to keep on top of it all in a calm manner so I'll make this a quick one. One of the easiest ways to get in some of your five a day is by cooking up this colourful Linguine vegetable medley. One that's flavourful; the chilli powder gives it a fiery kick, lemon adds a hint of sweetness and citrus, mixed herbs enhance the overall taste and turmeric gives this dish it's gorgeous, bright colour. Of course, the range of vegetables in this medley ensures that your taste buds pick up the variety of textures, you will not be disappointed.

Makes: 3-4 servings

What you need:
  • 9 ounces Linguine
  • 2 handfuls of broccoli florets
  • 110g Green Beans, chopped
  • 2 sweet potatoes, chopped and boiled until soft
  • 2 large tomatoes, finely chopped
  • 1/4 medium-sized onion
  • 3 tablespoons greek yoghurt
  • 1 cup water
  • 2 carrots, chopped
  • 1 clove garlic
  • 1 tspn ginger powder
  • 4 large whole chillies
  • 1 tablespoon mixed herbs 
  • 1 tablespoon chilli sauce
  • 2 tablespoons olive oil

Method:
  1. Place linguine in large pot, add in boiling water and cook on medium heat. Drain and set aside.
  2.  Blend tomatoes, chilli sauce, garlic, water, salt and spices until smooth. Set aside.
  3. Heat oil in a large wok. Add all vegetable ingredients (do not add tomatoes or linguine yet) and fry for 2 minutes.
  4. Add blended mixture and linguine to wok, mix well and allow to simmer for 10 minutes.
  5. Serve.

Ideal for quick lunches or dinners. Enjoy!
