Serves 4
What you need:
1 1/2 cup cooked rice
450g chicken breast, cut into pieces
2 tbs olive oil
2 cloves garlic, grated
1 pineapple, chopped into cubes
1 red onion, chopped
1 red bell pepper, chopped into small pieces
1 tsp tamari soy sauce
1 tsp ginger
1 tsp mixed herbs
1/4 cup water
Half a lemon
Method:
- Chop up pineapple into bite sized chunks. Chop up red onion and bell pepper then set aside.
- In a large pan on medium heat, fry chicken breast pieces in 1 tbs oil until no pink remains.
- Transfer chicken to plate and then set aside.
- Return skillet to heat and add another tbs of oil. Fry onions, garlic, bell peppers and 1 tsp ginger.
- Add 1/4 cup of water and tamari soy sauce. Pour in precooked rice and mix.
- Add chicken and pineapple chunks. Season with mixed herbs and squeeze in fresh lemon juice. Fold gently until well mixed
- Serve.
