Thai Chicken and Pineapple Fried Rice

Are you a fan of sweet and savoury? Yes? Well this one's for you. One pot dishes have become my go to on busy days as they don't require much effort. I don't know about you but I'm not a fan of dishes either so just having one pan to wash is a bonus. This Asian inspired dish is full of flavour, it's colourful and is an easy weeknight meal. Its also budget friendly and is a great way to incorporate more fruits into your diet. Besides, its absolutely delicious and that should be incentive enough to give it try.

Serves 4

What you need:

1 1/2 cup cooked rice
450g chicken breast, cut into pieces
2 tbs olive oil
2 cloves garlic, grated
1 pineapple, chopped into cubes
1 red onion, chopped
1 red bell pepper, chopped into small pieces
1 tsp tamari soy sauce
1 tsp ginger
1 tsp mixed herbs
1/4 cup water
Half a lemon


Method:
  1. Chop up pineapple into bite sized chunks. Chop up red onion and bell pepper then set aside.
  2. In a large pan on medium heat, fry chicken breast pieces in 1 tbs oil until no pink remains.
  3. Transfer chicken to plate and then set aside.
  4. Return skillet to heat and add another tbs of oil. Fry onions, garlic, bell peppers and 1 tsp ginger.
  5. Add 1/4 cup of water and tamari soy sauce. Pour in precooked rice and mix. 
  6. Add chicken and pineapple chunks. Season with mixed herbs and squeeze in fresh lemon juice. Fold gently until well mixed
  7. Serve.
